About the School
The Arizona Culinary Institute is situated in Scottsdale, Arizona. The school features five kitchens and a student-run restaurant. The institute provides a diploma in Culinary Arts, Restaurant Management and Baking. The curriculum is based in French Method cooking and modern techniques.
The first six months of the curriculum teach the basics while the next three months of training occurs in a paid internship. The institute features a Front Line Kitchen, a Bakery, Saucier Kitchen, Advanced Baking and Showpiece Kitchen and a Basic Culinary Arts Kitchen. The school's du Jour restaurant is run by the students and serves as a laboratory and classroom.
Academic Programs
The Institute' s Culinary Arts program begins by providing basic professional skills, concepts and theories. Classical French cooking theory is emphasized including the Mother Sauces and the Principles of Escoffier. Advanced training techniques and additional topics are added as the program progresses. The program included courses in saucer and meat fabrication, basic and advanced baking, wines and spirits and nutrition. Restaurant management skills are learned by working at the student run restaurant. The curriculum emphasizes theory and practical training.Learning Options

Faculty
The chef/instructors have real-world experience. They offer culinary theories and practical training.
Student Life
Many students enroll in order to find employment in the culinary industry. Some professionals attend the institute to advance their culinary careers. A number of students enroll due to their passion for cooking.
School personnel provide assistance to students in obtaining housing. The Placement Director helps students find culinary employment while they are attending the institute. In addition, the Arizona Culinary Institute provides a comprehensive library. While on campus, students wear chef uniforms.
Admissions and Financial Aid
Students may begin the enrollment process online. An enrollment package will then be sent to the student. Applicants must have a high school diploma or a GED credential. Federal financial aid and other types of aid are available for qualified students.
