About the School
Through its affiliation with Le Cordon Bleu, Texas Culinary Academy (TCA) provides students with an extensive hands-on culinary education that emphasizes classic European techniques using cutting-edge American technology. Students receive the required training to become proficient in fundamental cooking methodologies.
TCA is host to two on-site, student-run restaurants: Ventana, a fine-dining establishment and the Bleu River Grille, a bistro. These facilities give students an opportunity to utilize their culinary-skill training.
Academic Programs
The program courses are designed to give students mastery of both classic European techniques while using modern American technology. The school strives to provide a nurturing educational environment that lays the groundwork and technical skills that graduates need for success in the food service industry.
- Associate of Applied Science Degree Program in Le Cordon Bleu Culinary Arts – This track gives students the opportunity learn classical European cooking methods plus other important aspects of food preparation, including nutrition and sanitation. On-campus student-run restaurants gives students an opportunity to experience both the front- and back-of-the-house operations. The curriculum is designed to provide students with the background for a career in the food service industry in entry- to mid-level positions.
- Certificate Program in Le Cordon Bleu Patisserie and Baking – This program prepares graduates to produce basic to advanced bakery and patisserie products. The technical training teaches the creation of breads, muffins, cakes, tortes, custards, doughs, chocolate products, sugar decorations, puff pastries, and an array of show piece desserts.
- Certificate in Le Cordon Bleu Culinary Arts – Students learn the culinary principles and technical skills based on the Le Cordon Bleu Institute's Parisian traditions. Learning opportunities occur in lecture courses, the culinary, and the on-campus restaurant.
Learning Options
The Academy's "externship" program gives students the opportunity to gain real-world experience in local industry facilities. "Externship" coordinators work with students to set up placements that align with their career goals.
Faculty
Classes are taught by professional chefs who come with an in-depth understanding of the food-service industry. Their expertise provides insight to the real-world workings of the restaurant business. The teachers at TCA have over 500 years of combined experience.
Student Life
The Academy runs an array of extracurricular activities. Students can participate in chef competitions, chili cook-offs, and the annual pumpkin-carving contest. Participating in student government gives an opportunity to help shape the future of the school.
The school does not provide on-campus housing but they will help students find local housing in and around the campus.
Admissions and Financial Aid
Applicants go through personal or telephone interview with an Admissions representative so that the school can gauge the candidates passion for the culinary arts. Applicants need a high school diploma or equivalent (GED) for admittance. Students may apply online.
Financial aid is available for students who qualify. Families should begin the application process by completing the Free Application for Federal Student Aid (FAFSA). The TCA Financial Aid staff will help students navigate through the application requirements.
